What is Palinka?
Palinka is a high quality traditional liquor made in Transylvania, Maramures, Krishana and Banat regions of Romania. Palinka is recognized in the European Union (EU) as a Geographical Indication (IG) Traditional Distilled Spirit and cannot be produced elsewhere.
The only fruits permitted as ingredients for palinka are plums, mirabelle, apples, raspberries, blackberries, apricots, peaches, pears, redcurrants, black currants, scores, elders, quince and juniper berries, made with other ingredients. Liquor cannot be called "Palinka".
Palinka's tradition dates back to 2000 years and is made with extremely strict manufacturing methods. Fermentation of the fruit must be done in wooden barrels or stainless steel tanks, and distillation must be done in copper boilers or state-approved distillation equipment. Also, the aroma and taste of palinka after distillation should have the characteristic aroma and taste of each fruit. Aging is also possible, but only wooden barrel aging, bottle aging or stainless steel tank aging is permitted, and aging in barrels or containers made of other materials is prohibited by law. The alcohol content of Palinka must be at least 40 degrees. The raw material of palinka is only fruits, and the use of other raw materials is prohibited, so it does not contain any sweeteners, flavors, colorings, etc. Of course, it is a 100% natural liquor with no added sugar or acid.

How to drink palinka
In Europe, it is drunk in the same way as Italian Grappa and French Calvados, but it is common to pour it straight into a shot glass and drink it all at once. Basically, it is said that it is good for digestion of meals as it is drunk after meals. Since the alcohol content is relatively high, 50ml or less per day is considered appropriate. It is sometimes drunk on the rocks like brandy, but it is not customary to mix it with water or hot water.
