About the manufacturer
ZARO has been making wine in the Istra region in western Slovenia since 1348, and is the oldest winery in the region with a history of 700 years. We started with 2 ha of olive oil fields and now we own 20 ha of vineyards and olive groves. In Slovenia, where there are many small-scale producers of 0.5ha or less, 20ha is a vast area, but the family manages it.

We have cultivated the traditions and vineyards handed down from our ancestors, and have updated and upgraded with a modern approach in search of better wine making before the world trend in grape cultivation and winemaking. In 1991, it became independent from the former Yugoslavia, and since the socialist state era, it was prohibited to source the producers. Since 2015, the generation has changed, and now the 3rd generation owner Matesh and his father are working hard to make wine.

ZARO's fields are filled with colorful flower gardens. Cover crops protect the topsoil and retain moisture. Not only weeds, but also seashells can be seen. The soil is neutral with a pH of 7-7.2, and since it is only about 1km away from the coast, this area used to be the bottom of the sea. So the soil is rich in minerals, which also affects the wine. 80% of the fields spread on the slopes of hills of 35 to 45 degrees, all facing south, so they can be exposed to the sun for a long time all day long (more than 10 hours / day) and have enough sunlight. can be secured. Sea breezes keep the humidity low and the grapes protected from mold and other diseases.

ZARO controls the number of grape clusters and the number of leaves according to the style of each wine. In addition, we are changing the division of the field, the timing of harvesting, and the selection criteria.

Grape variety
Malvasia is a major variety in Italy and Croatia. It boasts the 5th largest cultivation area in the Primorska region and the 2nd largest in the Istra region. It is made by laying it on the dregs for 90 days in a stainless steel tank (surrely). The flavor of the lees is added, and the skeleton is formed more, making it stable as a wine.
