Fermented for 15 days at 16°C for each grape variety. A blend of 3 wines. Cooled to -4 to -5°C and allowed to stand for 10 days to stabilize. The second fermentation is for 15 days in a sealed stainless steel tank set at 15°C. Stabilized for 6 months, cooled to -4°C, filtered and bottled. During the assemblage before the second fermentation, we repeat the tasting many times to determine the final blend ratio and taste of each variety
