The second fermentation is for 15 days in a sealed stainless steel tank set at 15°C. Stabilized for 6 months, cooled to -4°C, filtered and bottled. During the assemblage before the second fermentation, we repeat the tasting many times to determine the final blend ratio and taste of each variety
