Message from Paul

NIKOLAOS translates to 'he who rules over people' in old Greek and serves as a dual-purpose brand.

First, it is a memorial to my father's name, Neculai, and a way to carry forward his work.

Second, it is a wine that speaks of the vine. Fermented solely with wild yeast, without oenological interventions, my wines aim to showcase the full potential of the terroir. This is why the label proudly displays 'Terroir de Dobrogea.’

Tasting notes

  • Appearance
    It has a bright, pale lemon color.
  • Nose
    The aroma is very rich, with a predominant mineral character. It carries scents of petrol (yes, just like a high-end German Riesling!!!), flint, wet stones, and wool, along with hints of blackcurrant leaves, gooseberry, yuzu, hay, lychee, apricot, nectarine, apple, pear, and lemon. There are also nuances reminiscent of bread dough and brioche-like yeast. It's evolving in the bottle, and you can distinctly sense the matured notes of nuts and kerosene.
  • Palate
    It boasts a rich mineral character derived from the calcareous soil, and it beautifully harmonizes moderate acidity with fruitiness. There's a subtle sweetness reminiscent of citrus fruits, making it very enjoyable to drink. You can detect slight yeast and wheat nuances on the palate. The aftertaste unfolds with apple flavors, similar to when you drink German chamomile tea or apple-based herbal tea, leaning more towards yellow apples than green apples. It has a medium body. Crafted by wild yeasts, it offers a soft and smooth drinking experience. It doesn't exhibit the typical assertiveness often found in natural wines; instead, it presents itself elegantly. It's the finest Sauvignon Blanc that beautifully expresses the terroir of the Dobrogea region along the Black Sea coast in Romania.

    It pairs wonderfully with appetizers and salads featuring olive oil, chicken or fish dishes seasoned with herbs, low-oil fresh cheeses, aioli, tapas, Mediterranean cuisine, grilled young chicken thighs, and white fish with lemon-based sauces.
