Sauvignon Blanc is a popular international aromatic variety known for producing light to medium-bodied, dry wines with herbaceous aromas, vibrant acidity, and lively fruit flavors. It is usually grown in cool and moderate climates. It produces mostly unoaked wines meant to be consumed while young and fresh.
According to the data from the International Organization of Vine and Wine (O.I.V.) in 2017, it ranks 11th globally (8th if we consider only wine grapes, and 3rd if we consider only white wine grapes) with a total cultivation area of approximately 123,000 hectares.
Sauvignon Blanc, grown in cooler climates, exhibits aromas of citrus (especially lemon and lime), herbaceous (tomato leaves, grass, parsley, black currant leaves), green fruits (apple, gooseberry), and wet stones. It also offers a fresh acidity reminiscent of citrus (lime, grapefruit), green apple, and a flinty mineral character.
In warmer climates, Sauvignon Blanc takes on a pale gold color, with aromas of tropical fruits (passion fruit, pineapple), acacia flowers, orange blossom, peach, and sometimes mango. The taste is fruity, with flavors reminiscent of pear and pineapple.
Due to its refreshing aromas and light drinking style, Sauvignon Blanc is generally consumed young, within five years of production, without undergoing oak aging or extended maturation.
However, there are exceptions, and some examples, like the Etika Fume 2020 from Sahateni Winery, showcase how Sauvignon Blanc can transform into a voluminous wine with nutty aromas (almond, hazelnut) after oak aging.
Except for barrel-aged Sauvignon Blanc, it is typically enjoyed chilled during hot summer days, highlighting its crisp aromas and lively palate.
