For over 60 years, at Jidvei, sparkling wines are produced using the traditional method. These wines are fermented, clarified, and delivered in the same bottle. All the operations necessary for obtaining the final product (tirage, fermentation, riddling, disgorging) are carried out manually.

- Appearance
Clear, golden with greenish reflections. Fine and persistent effervescence. - Nose
Right from the first nose, we are greeted with nuances of fresh bread and biscuits, originating from aging on lees, in the bottle. Notes of chamomile, acacia, green apple, and lime complete the olfactory spectrum of this outstanding sparkling wine. - Palate
The taste is invigorating and full of life. Compared to the classic Jidvei Extra Brut, it is sweeter, but the sweetness is in very good balance with the acidity. - Food pairing
Salmon, prosciutto, dried fruits, raw oysters, fresh fish carpaccio, mushroom risotto, Japanese desserts, not overly sweet. It does an impeccable job as an aperitif.
