Introductory notes

For over 60 years, at Jidvei, sparkling wines are produced using the traditional method. These wines are fermented, clarified, and delivered in the same bottle. All the operations necessary for obtaining the final product (tirage, fermentation, riddling, disgorging) are carried out manually.

Tasting notes

  • Appearance
    A clear, pale golden color with a persistent, fine effervescence.
  • Nose
    The nose has aromas of grapefruit, lemon peel, pear, flint, wet stones, grass, chamomile, acacia blossom, green apple, and lime. There's also a hint of sweet basil, contributing to the freshness. The traditional method (bottle fermentation) imparts a distinct aroma of bread dough and brioche.
  • Palate
    The taste is crisp, and the bubbles are lively and vibrant. The pleasant acidity is beautifully balanced with citrus and green fruit flavors. Elegant yeasty notes on the finish. 
  • Food pairing
    It pairs well with fresh oysters, fish carpaccio, mozzarella and eggplant, Parmesan and eggplant, pan-fried dumplings, pot stickers, potato fries, lemon mustard chicken wings, mayo-coated fried chicken, honey mustard chicken sauté, salsa salad with tuna and avocado, white wine steamed clams, seafood paella, roasted tomato and anchovy flavored salad, garlic-infused octopus with parsley, lemongrass chicken stew, Tandoori fish, and Banh Mi.
