Introductory notes
For over 60 years, Jidvei has been producing sparkling wines using the traditional method—where fermentation, clarification, and bottling all happen within the same bottle. Every step of the process (tirage, fermentation, riddling, disgorging) is done by hand, ensuring artisanal quality in each bottle.
Tasting notes
Appearance
Clear and pale golden in color, with persistent and fine bubbles.
Nose
Vibrant aromas of grapefruit, lemon peel, pear, flint, wet stones, chamomile, acacia blossom, green apple, and lime. Hints of sweet basil enhance the freshness. Traditional bottle fermentation adds subtle notes of bread dough and brioche.
Palate
Bright and crisp, with lively bubbles and refreshing acidity. The flavor profile is driven by citrus and green fruits, with elegant yeasty notes on the finish.
Food pairing
Pairs beautifully with fresh oysters, fish carpaccio, mozzarella and eggplant, Parmesan and eggplant, pan-fried dumplings, pot stickers, fries, lemon-mustard chicken wings, mayo-fried chicken, honey mustard chicken sauté, tuna-avocado salsa salad, white wine steamed clams, seafood paella, roasted tomato and anchovy salad, garlic octopus with parsley, lemongrass chicken stew, Tandoori fish, and Banh Mi.
