Aligoté
Aligoté, a white grape originally from France, is a lesser-known variety in the global wine market but produces exceptional wines. Tasting notes
Appearance
A healthy, radiant medium lemon color with fine, persistent bubbles.
Nose
The wine opens with fresh and abundant floral aromas, featuring nuances of acacia, elderflower, and chamomile. These are beautifully complemented by fruity notes of green apple, white peach, and pear, enhancing its vibrant character. Additionally, six months of sur lie aging lend sophisticated depth with pastry-like aromas, adding an elegant and layered complexity.
Palate
Crisp and refreshingly vibrant on the palate with lively, energetic bubbles. The pleasant acidity is well-balanced with citrus and green fruit flavors, including nuances of green apple, citrus, and a hint of dried hay. The harmony between the fresh acidity and moderate fruitiness is beautifully maintained.
Food pairing
This exceptionally versatile sparkling wine is perfect for food pairings. It complements herb-crusted white fish, vegetable and seafood appetizers, caponata, grilled chicken, salads with yogurt dressing, and fresh cheeses beautifully. It’s also an excellent match for Japanese dishes like nanbanzuke, summer vegetable tempura, and sushi.
