Appearance
Clear and vibrant lemon-yellow.
Nose
Lively and expressive, the nose bursts with fresh aromas of white peach, pear, and green apple. Delicate floral notes of wildflowers, elderflower, acacia, and chamomile add elegance and complexity. Citrus hints of lemon and grapefruit mingle with a pleasant minerality reminiscent of wet stones and flint.
Palate
Fresh acidity and ripe fruit are beautifully balanced, delivering a crisp yet elegant profile. The flavors echo green apple, lemon, and grapefruit, enhanced by subtle rustic hints of hay and a firm mineral backbone. While dry, there’s a gentle sweetness from the fruit, and the long finish leaves a slightly bitter note, like chicory.
Food Pairing
The refreshing character of Aligoté makes it an excellent match for herb-roasted white fish and other seafood dishes. It also pairs well with nanbanzuke (Japanese-style marinated fish), caponata, grilled chicken, yogurt-based salads, and fresh cheeses. Its finesse also complements delicately seasoned Japanese cuisine.
