Stori Winery is a winery located in the Tsinandari district of Kakheti, eastern Georgia in 2014. A small winery trying to revive traditional Georgian winemaking, but with an emphasis on distinctive flavors and quality, it is highly regarded by wine lovers around the world.
We only use grapes from our own vineyards and brew our wines exclusively in traditional Qvevri sellers. Essentially, all grapes are organically grown with very little added antioxidants.
Since the Qvevri ( clay jars ) are buried in the ground, the temperature is naturally kept constant, stabilizing the fermentation process. After fermentation, the Qvevri is sealed and allowed to contact skin for another 2-6 months.
When the Qvevri is opened, the skimmed 30% wine ( called first fraction or first distillate ) is very clear. Only the supernatant of this Qvevri is bottled and exported.
Tasting comment
The appearance is dark red like the Saperavi variety. The polyphenol content is very high, resulting in a dense and concentrated wine. You can feel the nuances of cherries derived from grapes and the nuances of nuts derived from barrel aging. Impressive soft tannins.
Food that goes well with
It goes well with home cooking in general, pizza, barbecue and curry rice.
