The grape
Saperavi is the most famous red grape variety in Georgia, primarily originating from the southwestern part of the country. It is also loved in Azerbaijan, Ukraine, Moldova, and Romania.
"Saperavi" means "dye" in reference to its characteristic where the color seeps from the skins into the pulp. This variety is suitable for long-term aging, producing a deep and robust red color.
Saperavi wines have rich aromas of dark berries, licorice, plum, and tobacco. They are known for their abundant tannins, high acidity, and spicy flavor. These wines come in various styles, from sweet to dry, and even fortified.
They pair well with dishes like pizza, BBQ, and cheese-based pasta.
