Introductory notes

The 2007 vintage holds special significance for Romanian wine – it’s the year Romania joined the European Union, a milestone that catalyzed modernization and quality improvements in the wine industry. This grape has a storied legacy: historically, Cotnari’s sweet wines (made from Grasă de Cotnari) were once counted among Europe’s most celebrated, alongside Tokaji Aszú. The wine is a botrytized dessert wine (affected by “noble rot” Botrytis cinerea), harvested late when the grapes are partially raisined. As a result, it is lusciously sweet with high natural sugar, yet crafted to retain balancing acidity. Cotnari’s “Vinoteca” designation means this bottle comes from the winery’s special reserve – wines aged patiently in cool underground cellars to develop exceptional complexity. Fully sweet Grasă de Cotnari wines like this are known for their longevity, often capable of aging for decades while improving. 2007, in particular, is considered a historic collector’s vintage, combining a landmark year for Romanian wine with a beautifully matured dessert wine.

Tasting notes

Appearance

In the glass, it displays a deep golden color that has developed into a rich amber hue with orange glints at the rim, reflecting its age and noble rot concentration. The wine is clear and bright in appearance, shimmering with brilliance despite its depth of color. Swirling the glass reveals viscous “tears” (legs) slowly running down the sides – a telltale sign of its high residual sugar from botrytized grapes. This luxurious appearance foreshadows the wine’s intensity and sweetness. Overall, an inviting golden-amber robe that is characteristic of well-aged Grasă de Cotnari.

Nose

The aromatic profile is highly complex and alluring. Pronounced notes of ripe orchard fruit and dried stone fruit leap from the glass – baked pear and dried apricot preserves, a signature expression of the Grasă de Cotnari grape. There is an enveloping perfume of honey and white flowers (spring blossoms, acacia) that adds a heady sweetness to the nose. As it opens, nutty undertones of sweet almond paste and walnut appear, reminiscent of marzipan, nougat, and a faint mineral/petrol nuance typical of aged botrytized wines. A delicate herbal note (dried herbs or chamomile tea) weaves through the sweetness, adding depth. Overall, the nose is intensely aromatic and layered, evolving in the glass with each sniff – from floral and fruity tones to honeyed and nutty nuances – inviting you to take a first sip.

Palate

On the palate, it is sumptuous and sweet, yet beautifully balanced. It is an unctuous dessert wine with a velvety, full-bodied texture that coats the mouth. Flavors mirror the nose: acacia honey and apricot jam sweetness up front, alongside notes of golden raisins and candied peach/pear, evoking grapes dried in the autumn sun. Despite the high residual sugar, it is not cloying; a bright streak of acidity provides lift and freshness that keeps each sip lively. Mid-palate, layers of caramelized fruit and a touch of orange marmalade or citrus peel emerge, likely a gift of noble rot complexity. Towards the finish, a pleasant almond/walnut nuttiness develops, accompanied by hints of dried fruit and spice that linger on the tongue. The finish is long, silky, and harmonious – the sweetness slowly fades, leaving echoes of honeyed nuts and apricot nectar. It is drinking wonderfully now at nearly two decades old, and still shows the structure (sugar, acid, and extract) to evolve further if cellared longer, exemplifying the great aging potential of this botrytized wine.

Food pairing

This luscious dessert wine is best enjoyed slightly chilled and can pair with a variety of dishes – from desserts to bold cheeses – that complement its sweetness. A classic pairing is with fruit-based desserts; the wine’s apricot, honey, and floral notes make it a beautiful match for an apricot tart, apple strudel, or pastries with dried fruits and nuts. It can also elevate simpler sweets like honey-drizzled panna cotta, crème brûlée, or baked pears with walnuts, echoing the wine’s own flavor profile. For contrast, serve it alongside aged or blue cheeses (e.g., Stilton, Roquefort) or a platter of soft creamy cheeses; the salty, pungent character of blue cheese or the richness of a triple-cream cheese is wonderfully balanced by the Grasă de Cotnari’s sugary intensity. Foie gras or pâté is another decadent pairing, as seen with Tokaji – a piece of foie gras terrine with this wine creates a luxurious sweet-savoury harmony. Finally, it can be enjoyed on its own as a digestif, a memorable finale to any special dinner.
