Botrytized Beauty from Traminer Roz
Jidvei, one of the most esteemed wineries in the Târnave region, crafts its signature sweet wines by blending traditional techniques with modern enology. Among these, the botrytized wines made from “Traminer Roz” (the local name for Gewürztraminer) are iconic representations of the estate’s excellence.
CIB Traminer Roz 2018
“C.I.B.” is a traditional Romanian label indication that the grapes were affected by noble rot at the time of harvest. This wine, released in 2018, was made from Gewürztraminer grapes left on the vine until partially botrytized. That year, ideal morning fogs provided the humidity needed for noble rot to thrive. The result: perfectly balanced grapes, rich in sugar and acidity, leading to a remarkable dessert wine unique to that vintage.

Tasting notes
Appearance
Deep golden in color with luscious viscosity forming distinct legs in the glass.
Nose
Opulent and layered. Aromas of rose jam, quince, white peach, honey, dried apricot, candied fig, honey lozenge, and poached quince unfold richly and elegantly.
Palate
A burst of sweetness greets the palate, quickly balanced by vibrant acidity, creating a refreshing structure. Mango and pineapple notes bring a tropical lift, while the finish reveals a pleasant interplay of honey and candied citrus peel. Despite its richness, the alcohol is moderate, and the interplay of sugar, acid, and alcohol creates a graceful and elegant dessert wine.
Food pairing
This wine's balance of sweetness and acidity allows it to pair surprisingly well with a variety of cuisines:
- Japanese cuisine: Pairs beautifully with traditional sweets like yokan or daifuku, where the wine’s aromatic sweetness complements red bean paste and mochi textures.
- French cuisine: A classic pairing with seared foie gras. The wine’s sweetness and acidity balance the richness, while blue cheeses like Roquefort provide a bold, savory counterpoint.
- Italian cuisine: A perfect match for Sicilian cannoli and other ricotta-based desserts, where the wine amplifies both creaminess and candied fruit flavors.
- Chinese cuisine: An unexpected but delicious contrast with spicy Sichuan dishes such as mapo tofu, where the wine's lush sweetness softens the heat while elevating the umami.
Service
- This wine is enjoyable now but may evolve further with a few more years of bottle aging. Chill to 6–8°C and serve in a small dessert wine glass to highlight its aromas and sweetness.
