Tasting notes

  • Appearance
    A healthy straw yellow color.
  • Nose
    The nose is rich and has a distinct mineral quality. It combines aromas of flint and wet stones from the limestone soil with notes of grapefruit, melon, pear, peach, pineapple, lychee, and fennel. There are also clear nuances of biscuit, brioche, and butter from malolactic fermentation. Oak aging contributes hints of vanilla, coconut, and nuts, making it a highly complex wine.
  • Palate
    From a fresh fruit attack to mineral elements, it offers a wide range of flavors. The texture is both fresh and smooth, providing a very pleasant drinking experience. The acidity is subtle but effectively tightens the overall profile, highlighting vibrant fruit. The finish leaves a pleasant freshness and concludes beautifully.
  • Food pairing
    It pairs well with a wide range of dishes, but it particularly excels with seafood marinades, smoked salmon, Chevre cheese, and mixed vegetable stir-fry.

  • Winemaking: The grapes were vinified using modern winemaking technology, macerating them for 5 hours at very low temperatures inside a pneumatic press. This careful process extracted the aromas, and fermentation began in stainless steel tanks at 17°C, continuing in oak barrels. At the end of fermentation, the wine was aged for 6 months in the same barrels. Subsequently, the wine was bottled and stored in the cellar to perfect its taste.
