Introductory notes

Compared to ordinary white wines, the production process of the wines in the Castel series involves more work and, especially, patience. Aging in the bottle for a prolonged period is a crucial stage during which new aromas develop, giving the wine a unique complexity.

Tasting notes

  • Appearance
    Golden color, with amber reflections.
  • Nose
    The nose is of pronounced intensity. The aromas are rich and complex. I find notes of dried flowers, apricot compote, dried figs, linden honey, lightly roasted hazelnuts, and subtle hints of caramel.
  • Palate
    The taste is dominated by sweetness. The balance of the wine is ensured by an acidity that still makes its presence felt despite the prolonged aging. The alcohol is moderate, and the body is full, primarily due to the sweetness. The texture is oily. The finish is rich and persistent.
  • Food pairing
    You can enjoy it with foie gras, aged cheeses, Japanese sweets, desserts, and spicy Chinese cuisine.
