  • Field and grapes
    Grapes suitable for rosé wine are harvested from fields dedicated to rosé wine. In order to make the best rosé wine, we decide the cultivation method, harvest amount and harvest time. The harvesting method is Night Harvest (night harvest), and the grapes are harvested between 2:00 am and 4:00 am in the middle of the night. In addition, the transportation time from the field to the winery is within 15 minutes, and it is quickly moved to the winery without using antioxidants. Harvesting at night and transportation distance to the winery are among the most important considerations for winegrowers and influence the taste of the final wine.
  • Manufacturing
    Fermentation tanks are divided not only for each grape variety, but also for each field. After a short period of maceration, the grapes are directly pressed, the skins and seeds are removed, and only the juice is subjected to alcoholic fermentation. Alcoholic fermentation is done in separate tanks for each grape variety and field. Even with the same grape variety, different tanks are used in different fields. The short-term maceration period also varies depending on the grape variety. The highly pigmented Cabernet Sauvignon and Syrah maceration takes about 4 hours, while the less pigmented Pinot Noir takes about 6 hours. The yeast necessary for fermentation is also divided for each grape variety, and the fermentation temperature is completely controlled for each variety. Preparing and managing stainless steel tanks for each grape and field requires a huge amount of equipment and management capabilities.
  • Blend
    After fermentation, it is aged in stainless steel tanks by January of the following year. All wines are tasted in January with our employees and external experts and thoroughly analyzed for quality. Not only human taste, but all data are converted into numerical values ​​and analyzed. We select only wines from tanks that have been evaluated as suitable for Mysterium rosé, determine the blend ratio, and blend the wines. After blending, the wine is bottled and aged in bottles for several months before being sold on the market. This is an essential process to maintain the style suitable for Mysterium Rosé.
