Message from Paul

"NIKOLAOS" translates to "he who rules over people" in ancient Greek and serves a dual purpose.

Firstly, it honors my father, Neculai, preserving his legacy. Secondly, it speaks to the vine itself. Fermented solely with wild yeast and no oenological interventions, my wines aim to express the true character of the vineyard. That's why the label proudly bears the phrase 'Terroir de Dobrogea.'

Tasting notes

Appearance

The wine has a bright, medium intensity, lemon hue. The sediment resembling crystals at the bottom of the bottle is called tartrate. It forms when tartaric acid in the wine binds with potassium or calcium and precipitates. Tartrate is a natural component of wine and poses no harm to the human body.

Nose

The aroma is rich, with dominant mineral notes. Scents of flint, wet stones, and wool blend with hints of blackcurrant leaves, gooseberry, yuzu, hay, lychee, apple, pear, lemon and acacia flowers. Nuances of bread dough and brioche-like yeast are also present. As the wine evolves in the bottle, mature notes of nuts and kerosene emerge, adding complexity.

Palate

This wine's mineral character reflects the calcareous soil it comes from, offering a balance of moderate acidity and fruitiness. There's a subtle citrus sweetness, with light yeast and wheat undertones. The aftertaste reveals apple flavors, akin to herbal teas like German chamomile or apple-based infusions, leaning towards yellow rather than green apples. Medium-bodied and crafted with wild yeasts, it provides a smooth drinking experience without the assertiveness often found in natural wines, making it an elegant and refined Sauvignon Blanc. It beautifully expresses the Dobrogea region's terroir along Romania's Black Sea coast.

Food pairing
