- Appearance
A radiant, deep gold color. - Nose
The aroma is very intense and rich. Notes of orange blossom, straw, hay, Damask rose, apricot, candied grapes, candied orange peel, quince, cardamom, barley tea, and mature honey are present, with hints of nuts and caramel. There is also a firm mineral presence, with flint and wet stone nuances. - Palate
The taste is vibrant, with a balanced acidity and vegetal notes, resulting in an elegant finish. It exhibits orange peel, apricot, and beeswax flavors, with a rich mineral character derived from the limestone soil. The acidity and fruitiness are harmoniously integrated, with a subtle sweetness adding to its pleasant drinkability. There are subtle nuances of yeast and wheat in the mouthfeel. While it is made with wild yeast, it offers a soft, smooth drinking experience without sharp edges. It maintains an elegant profile, with a subtle elegance that conceals the distinctive assertiveness often found in natural wines. - Food pairing
