About Chizay
Chateau Chizay is one of Ukraine's most important wineries. It sits in the Chizay valley near the town of Berehove, in Zakarpattia (Transcarpathia), Ukraine's westernmost region, just a few kilometers from the Hungarian border. Founded in 1995, the estate farms around 272 hectares of its own vineyards on the volcanic foothills of the Carpathians.
Over the centuries, this corner of Europe has belonged to many different states, and its wine culture carries Hungarian, Slovak, Italian and Austrian influences. Chizay respects these traditions while embracing modern technology and a sustainable approach to winemaking.
What is Chersegi?
Chersegi, known in Hungary as Cserszegi Fűszeres, is a white grape created in Hungary in 1960 by crossing Irsai Olivér with Traminer. In Ukraine, only Chizay grows it. Its signature aroma of apricot with a gentle touch of spice has won it many fans.
Why choose this wine?
The moment you pour it, lychee, apricot and white flowers leap from the glass. Behind this exuberant nose hides a crisp, dry wine: firm acidity carries the generous fruit, followed by a pleasant, delicate bitterness and a long finish. It shines with delicate dishes such as tempura, seafood and white asparagus. Serve it at 8~10°C and enjoy a rare Ukrainian white you won't easily find anywhere else in Japan.
About the crystals in the wine (tartrates)
The small crystals you may notice at the bottom of the bottle or on the cork are tartrates. They form naturally when tartaric acid from the grapes binds with potassium and crystallizes, usually after the wine has been exposed to cold. Sometimes called "wine diamonds", they are completely harmless and have no effect on quality. If you would rather avoid them, simply pour slowly and they will stay in the bottle.
Tasting notes
Appearance
Pale gold.
Nose
Medium (+) intensity with abundant fruit aromas: lilac, lily, cherry blossom, white rose, orange blossom, lavender and acacia, alongside mango, melon, apricot, candy, quince, lychee, pear and white peach, with touches of marzipan, honey, ginger and a hint of mint.
Palate
Fruit-driven with a light touch of spice. A crisp, dry wine with a pleasant, delicate bitterness. Generous fruit is backed by firm acidity, making it very fresh to drink. Medium-bodied with moderate alcohol and fairly intense flavors, it has a very long finish that leaves a faint iodine-like, slightly medicinal note. The interplay of fruit and mineral aromas makes this a truly memorable wine.
Food pairing
White asparagus, seafood, grilled chicken, tempura and soft cheeses.
