To me, the three wines in the Nikolaos range are that rare "something different" that makes you pause and truly appreciate them. Crafted with a unique approach—using carefully selected grapes and wild yeast fermentation—they astonish me every year with their remarkable harmony of varietal character and terroir expression.

These wines embody the very essence of Dobrogean winemaking: the crème de la crème. It’s a privilege to collaborate with Paul in showcasing these exceptional creations, and an honor to share not only the Nikolaos wines with the Japanese public but also the stories and passion behind them.

Message from Paul

The name Nikolaos comes from ancient Greek, meaning “the one who leads people to victory,” and this brand carries a dual significance for me.

First, it honors my father, Neculai—a man whose inspiration and guidance shaped my life and who continues to influence me in everything I do.

Second, the Nikolaos range reflects the vast potential of Dobrogean terroir. Guided by my father’s principles and values, these wines are my way of bringing the spirit of Dobrogea into your homes, along with the stories and traditions that define this remarkable region.

Tasting notes

Appearance

The wine has a bright, medium intensity, lemon hue. The sediment resembling crystals at the bottom of the bottle is called tartrate. It forms when tartaric acid in the wine binds with potassium or calcium and precipitates. Tartrate is a natural component of wine and poses no harm to the human body.

Nose

The aroma is rich, with dominant mineral notes. Scents of flint, wet stones, and wool blend with hints of blackcurrant leaves, gooseberry, yuzu, hay, lychee, apple, pear, lemon and acacia flowers. Nuances of bread dough and brioche-like yeast are also present. As the wine evolves in the bottle, mature notes of nuts and kerosene emerge, adding complexity.

Palate

This wine's mineral character reflects the calcareous soil it comes from, offering a balance of moderate acidity and fruitiness. There's a subtle citrus sweetness, with light yeast and wheat undertones. The aftertaste reveals apple flavors, akin to herbal teas like German chamomile or apple-based infusions, leaning towards yellow rather than green apples. Medium-bodied and crafted with wild yeasts, it provides a smooth drinking experience without the assertiveness often found in natural wines, making it an elegant and refined Sauvignon Blanc. It beautifully expresses the Dobrogea region's terroir along Romania's Black Sea coast.

Food pairing

This wine pairs wonderfully with appetizers, salads with olive oil, chicken or fish dishes seasoned with herbs, fresh cheeses, aioli, tapas, Mediterranean cuisine, grilled young chicken thighs, and white fish with lemon-based sauces.
