Wild yeast fermentation, unfiltered
A wine shaped by nature
This wine is fermented exclusively with wild yeasts, with no stabilizers added, and bottled unfiltered. The natural yeasts living on the grape skins and in the air ferment the juice slowly, building complex, deep aromas and flavors. Because the wine is neither stabilized nor filtered, you may notice some sediment. Far from being a flaw, it is part of what gives this wine its complexity and distinctive texture.
A message from Daniel
For me, the three wines of the Nikolaos series are rare finds: the kind of wines that make you stop and take the time to savor what makes them special. Born from carefully selected grapes and a unique approach built on wild yeasts, they never fail to surprise and move me. Above all, they are a pure expression of the philosophy that winemaker Paul holds dear.
A message from Paul
The name Nikolaos comes from ancient Greek and means "the one who leads the people to victory." For me, this brand carries two special meanings.
The first is a tribute to my father, Nicolae. He was a great inspiration in my life and shaped me as a mentor. His influence still lives on in everything I do.
The second is that the Nikolaos series reflects the great potential hidden in the terroir of Dobrogea. Guided by my father's ideals and values, I hope to bring the spirit of Dobrogea to your table through these wines. I am truly proud to share the stories and traditions of this wonderful region, one glass at a time.
Tasting notes
Appearance
Medium lemon, with a slight haze from the lees.
Nose
Wonderfully rich, opening with a vivid minerality of flint and wet stone. Green apple, pear, white peach, grapefruit and lime follow, while biscuit, cheese, nuts, dried ginger and a whisper of hay add complexity, together with yeasty notes reminiscent of rising bread dough.
Palate
Sugar and acidity are beautifully balanced, with generous fruit. A rich, slightly oily texture meets a delicate spritz on the tongue, giving the wine a personality all its own. The finish slowly unfolds white peach and grapefruit layered with bread dough notes, and shows a firm body.
Food pairing
Caesar salad, white fish meunière, fish and chips with tartar sauce, buffalo mozzarella, a rich carbonara or a high-hydration focaccia. It also loves cheesy dishes, cream sauces and anything with yeasty aromas, and herbs such as dill or tarragon make a beautiful accent.
